Our tray is a transparent thermoformed mold, made from recyclable APET plastic in our factory in France. It allows you to cast 6 impressions per plate to make your own chocolate log heels. (Allow approximately 12.5g of chocolate per imprint, or 25g to decorate an individual log or a log to share) The format of the imprint is rectangle, dimension 6.2x5.3cm x3mm thick. These are smooth heels, without relief, which harmoniously finish the logs made with the “small model” log molds from PETIT.
Tip: add an additional decorative touch by poaching with food spray (your brand logo, Christmas motif decoration, etc.), or by adding crushed dried fruits (hazelnuts, almonds, etc.) to the molding stage, for example. .
How to use the chocolate log heel mold?
1. Temper your couverture chocolate (you can use white, dark or milk chocolate).
2. Mold the chocolate into the indentations, tapping lightly to avoid air bubbles.
3. Let the chocolate crystallize in a cool place.
4. Unmold carefully so as not to break the heels, and store them between flexible plastic sheets.
