Pastry frame: the essential tool for flawless desserts

The pastry frame The frame mold is an essential tool in professional pastry kitchens. It allows for the precise and consistent assembly of entremets, cakes, and multi-layered desserts. The traditional frame mold, used in academic training, is made of stainless steel. Its main drawback is that it requires additional steps before and after use, such as lining the mold with parchment paper and then placing the frame on the baking sheet, removing it from the frame after freezing, and cleaning it after use.
To meet the needs of today's pastry chefs, PETIT has designed an innovative range of APET plastic pastry frames : ready to use, hygienic, with an integrated base, and recyclable. A real time and efficiency saver for demanding professionals.
1. What is a pastry frame?
A pastry frame is an essential tool in any professional pastry chef's kitchen. Unlike entremets rings, which create a round shape, a pastry frame allows you to assemble large-format desserts of approximately 40x60cm, perfect for mass-producing cakes.
Cakes made in frames can be used as is for big occasions: weddings, family parties etc. But most often, they are cut into rectangular or square cakes , or into more creative shapes thanks for example to a “Watercut” or waterjet cutter.
The frame therefore allows you to make cakes with a single format, either 4/6 or 6/8 servings to share, or entremets cut into individual portions and sold individually in the shop.
Generally, the frame is a simple stainless steel outline, without a bottom, of variable height (often between 4 and 5 cm), used to assemble multi-layered desserts with biscuit, crispy base, mousse, fruit jelly, fresh fruit, inserts, etc. It is therefore ideal for assembling recipes such as fraisier, trianon, mocha, opera, cheesecake, or even entremets and vacherins glacés.
Professional pastry frames are available in different materials: stainless steel, plastic, and less commonly silicone.

2. Professional pastry framework: chefs' expectations
In both production and retail settings, professionals expect several things from their pastry-making environment :
-
Quick assembly , without unnecessary steps
-
Good stability , for precise layering.
-
Good sealing to prevent the foam from dripping under the frame
-
A perfect release from the mold
-
A consistent format , for a neat finish when cut
-
Impeccable hygiene , with no risk of residue or transfer
-
A space saver , both in use and storage
-
Availability : a significant need for frames of the same format to launch mass production
The disposable pastry frame meets all these expectations, whatever the context: training, event or daily production, small volumes to large series, or recipes that require perfect, simple and clean unmolding.
PETIT, a French manufacturer renowned for its thermoformed plastic pastry molds, has developed a range of APET plastic pastry frames. designed for these professional uses.
3. Why choose a SMALL plastic pastry frame?
The plastic pastry frame developed by PETIT was designed to meet the real constraints of laboratories: productivity, efficiency, cleanliness, consistency of results and ease of use.

Here's what makes it different:
✅ Zero drips, no leaks
Unlike a stainless steel frame that requires a guitar sheet or silicone base, the PETIT plastic frame has its own base . This prevents leaks of foam or liquid preparation during assembly, resulting in greater convenience and cleanliness. The plastic frame is stable and ready to use immediately.
✅ Quick assembly and unmolding, and a flawless finish
No more tedious steps: no need to line the frame with acetate, check the tightness of the assembly, or use a guitar sheet.
With the SMALL plastic frame:
-
Simply place the mold on a rack or baking sheet
-
To assemble directly in the mold
-
And when it comes time to unmold, a simple pass of warm water under the mold is enough to detach the dessert.
Alternatively, you can also cut the corners to release the cake neatly. A real time-saver, especially for teams in training or during busy periods.
✅ No need to remove the frame after freezing
With a traditional stainless steel frame, you have to unmold the dessert once it's chilled in order to retrieve the frame and reuse it. The result: extra steps, risk of frosting, and wasted time.
With the PETIT frames , the entremets can remain in the mold until unmolding before finishing. The APET plastic does not retain moisture, frost does not form on the sides, and guarantees perfect product stability.
✅ Guaranteed hygiene
Each frame is packaged in a food-grade plastic sleeve. It can therefore be used directly out of the packaging , without the need for prior washing. This is an advantage in terms of hygiene, but also in terms of laboratory organization.
When frames are used for single use, there is no need to wash them and then store them properly, saving even more time in post-production and saving space.
4. An eco-friendly product, made in France
At PETIT, technical performance is not achieved at the expense of environmental commitment.
Disposable pastry frames are :
-
Made in France , at the PETIT factory based in Savoie
-
Made from APET plastic , a material that is recyclable through existing channels
-
They incorporate a portion of recycled plastic into their composition
And unlike stainless steel frames, which require long, water- and energy-intensive washing cycles, PETIT frames generate no additional impact. Once used, they can be sorted without affecting the quality of the recipe or the organization of the lab.
Finally, their stackable design allows for optimized storage , even in large quantities. Ideal for establishments with high production volumes or limited storage space.
The pastry frame is no longer just a technical tool: with the range developed by PETIT, it becomes a true production ally. No more need to remove the frame, line the molds, or manage their availability. APET plastic pastry frames combine practicality, hygiene, and performance, while incorporating a portion of recycled material and being recyclable themselves.
A French innovation that simplifies the daily lives of chefs, caterers and pastry trainers, while guaranteeing an impeccable result for every dessert.
